East Indian Spinach and Lentils
I got this recipe from one of my favorite cookbooks called Extending the Table. It's a collection of not only recipes, but also stories, from around the world.
One of my friends and I had discovered a yummy Indiana restaurant and had been eating at it about once a week for awhile. So the next time we craved Indian food, instead of going to the restaurant yet again, we decided to try out making our own Indiana food. We looked in my Extending the Table cookbook and found a recipe for East Indian Spinach and Lentils (Baji Dhal) and tried it out.
For the exact recipe you're going to have to buy this amazing book (it's worth it), but here is a summary of what we did:
First we browned an onion in a skillet then added garlic and ginger then stirred in cumin, curry powder, salt, and hot chili peppers. We then added rinsed red lentils and covered them with that sauce.
We added water, potatoes, and spinach.
After all of that was cooked we served it over rice, cucumber & tomato slices, and chipati bought from the Indian store, and sprinkled it with cilantro. We did not regret not going to the Indian restaurant that day!
