Indian-Inspired Roasted Cauliflower and Chickpeas

The picture I have for this is horrible.  It's from my phone.  As bad as the pic is...the recipe is 1,000 times better!  The link to the recipe- has much, MUCH better pics of this great dish!

This recipe is easy and fast, especially considering how good it is.  All you need is cauliflower, a can of chickpeas, a can of diced tomatoes, graham masala seasoning, and oil.  Mix all the ingredients together and bake at 450 for 15-20 min.  Season with salt if desired and serve over rice.  I also served it with store-bought chapati.
