The day I made lettuce wraps I also made pan-grilled spicy Thai chicken for the main course. Geez, I really spoiled my friends that day! I used this recipe- http://www.americanprofile.com/recipes/pan-grilled-spicy-thai-chicken/ & it was really good! This recipe calls for corn oil, I just used olive oil & I did not use any coconut. I served the meal over rice. If you decide to make it keep in mind the chicken must marinade in the sauce for a 1/2 hour so plan for that! This meal was really really good!
