Enchiladas

Apparently my roomie and I like Mexican food because another dish we made together was enchiladas.  I've had restaurant enchiladas before, but the recipe my roomie found for these called for feta cheese.  I love feta and had never tried an enchilada with that type of cheese so I was convinced!  It was also a chance to use a type of food I'd never used before- tomatillos!

I know it wasn't this exact recipe as we did not broil them, we baked them, but this is the closest I could currently find & this recipe sounds delicious as well!
